Thandi’s Eats – Feb ’16

Red Pepper Pasta 1  Happy March! Can you believe it’s March already? Before we know it, we’ll be sipping mulled wine an wrestling with Christmas trees again. If anyone asks, this is the reason I give for the fact that my Christmas wreath is still hanging on the front door.

I’ve been enjoying the sun and sea this month in South Africa, before I have to pack up and brace myself for the frosty spring in London. I’ve enjoyed loads of fruits, salads and of course my beloved avocados. Here are my top eats from last month.

Chia Breakfast Trifle

Chia Breakfast Trifle 1Happy Friday! I have another delicious breakfast recipe for you. As you can tell, I’m currently on a little bit of a health kick.. Well at breakfast anyway. I figured if I start the morning right, I’m entitled to a trough of fries by the end of the day.

Caramelised Onion Quesadillas

Vegan Quesadilla

I have always been a bit of a night owl. Of late I find myself calling it a night when other people are hitting the snooze button. As a result my eating schedule is ‘slightly’ warped. My current sleeping pattern is officially a mess and the concept of breakfast has gone out the window. I wake up giddy with hunger and wanting to eat pretty much everything. Cereal and almond milk are just not going to cut it, so I break out a pan and make this tasty wonder. Whether you are having it for breakfast or lunch, there quesadillas are a winner.
