Since the beginning of my plant-based journey, lentils have been my go-to pulse. I love that they’re nubbly and gritty texture. They add a lovely bite to vegan dishes. I had a friend’s boyfriend joke that if you were going to a vegans’ house for dinner, you were pretty much guaranteed lentils. Admittedly, I’ve eaten more lentils now than I’ve ever eaten in my life. Jokes on him though.. Caus lentils are awesome!
Happy March! Can you believe it’s March already? Before we know it, we’ll be sipping mulled wine an wrestling with Christmas trees again. If anyone asks, this is the reason I give for the fact that my Christmas wreath is still hanging on the front door.
I’ve been enjoying the sun and sea this month in South Africa, before I have to pack up and brace myself for the frosty spring in London. I’ve enjoyed loads of fruits, salads and of course my beloved avocados. Here are my top eats from last month.
I realise that January is fast coming to an end but… Happy New Year! Would you believe me if I told you my holiday-haze ended this past Monday? It’s been an insane festive season with far too much of everything. I’ve hardly slept, I partied to the point of no return and forgot what leafy greens were.. It was awesome!
Unfortunately the urgent emails are flooding my inbox, so it’s time to take off the beer goggles and be a grown-up. Since I’ve spent most of the week trying to redeem myself professionally, I decided to face the dreaded monster that is fitness this week too. As motivation, I made myself this sweet protein smoothie to get myself back on the wagon.
Have you ever noticed how excited vegans get about vegan pizza? The vegan pizza groupies are somewhat of a social media cult. I say this because I know for a fact that there are blogs dedicated solely to vegan pizza, trust me it’s a thing.
I think the reason vegan pizza is such a triumph is because in a lot of instances, it tastes just as good as regular pizza. It’s always a triumph when you can get a vegan product to mimic and rival the original. These pizza twists capture all the vital pizza flavours and crispy dough all dunked gooey dipping sauce.
Happy Sunday! I love Sunday’s, they are the ultimate chill day. Sunday is the day of rest from the weekday madness and the small miracle it takes to wake up on time 5 days in a row. The weekend is the time when I blare the Katy Perry, break out the big-boy frying pan and make pancakes in my jammies. In many a household the world over – Sunday is Pancake Day.
The only problem is when you’re all alone.. And it’s Pancake Day. You could either – a) make my amazingly fluffy Vegan Pancakes that serve 4 and eat them all or b) have muesli and become one of those people who does their own taxes. Since I have no intention to become a grown-up anytime soon, I opt for secret bonus option c) Make these awesome single serving Banana Pancakes.
