Happy Sunday! I love Sunday’s, they are the ultimate chill day. Sunday is the day of rest from the weekday madness and the small miracle it takes to wake up on time 5 days in a row. The weekend is the time when I blare the Katy Perry, break out the big-boy frying pan and make pancakes in my jammies. In many a household the world over – Sunday is Pancake Day.
The only problem is when you’re all alone.. And it’s Pancake Day. You could either – a) make my amazingly fluffy Vegan Pancakes that serve 4 and eat them all or b) have muesli and become one of those people who does their own taxes. Since I have no intention to become a grown-up anytime soon, I opt for secret bonus option c) Make these awesome single serving Banana Pancakes.
Today is possibly the foggiest day in the history of London. Being someone who loves any excuse to have a lazy day, I have spent most of the day bing-watching Friends and eating leftovers. I have always been a bit of a night owl. Of late I find myself calling it a night when other people are hitting the snooze button. As a result my eating schedule is ‘slightly’ warped. My current sleeping pattern is officially a mess and the concept of breakfast has gone out the window. I wake up giddy with hunger and wanting to eat pretty much everything. Cereal and almond milk are just not going to cut it, so I break out a pan and make this tasty wonder. Whether you are having it for breakfast or lunch, there quesadillas are a winner.

It feels like I blinked and it was June, but time flies when your moving house! I’m always happy to see the middle of the year roll around. I’m itching to pack my bag and satiate my travel bug. Although for the moment, I’m drowning in boxes and busy work.
Since my schedule has been insane, I’ve become big on snacking. Many of my midday snacks involve easy meals with lots of veggies and flat breads. Needless to say, I now have a growing dip obsession.
